57: iced cappuccino

The weather is heating up, and I’ve been desperate to hit up a certain Canadian coffee shop for an Iced Cappuccino, but despite it being one of their most popular items they have yet to create a decaf version for those pregnant or caffeine adverse. I’ll admit that I may have fell off the wagon a time or two and enjoyed a small (10oz) cup of the naughty drink, but I’ve been looking for a way I can recreate it at home.

Motherhood

The recipe below isn’t exactly like the coffee shop’s drink. In fact it probably has nothing in common with what they serve when I go through the drive-thru as I can pronounce each and every one of the 3 ingredients (plus water) and it costs less than $.10 per serving.

If I’m having it in the afternoon, I’ll sometimes omit the sugar and throw in a scoop of vanilla protein powder instead; it changes the taste, but adds about 18g of protein to my day.

Iced Cappuccino

2 oz hot or boiling water

2 Tbsp Instant coffee crystals (I use decaf!)

2 Tbsp Sugar (or sugar substitute if you must)

6-10 Ice Cubes

1/3-1/2 cup cream (I use half and half/10%)


Mix the instant coffee and sugar into the hot water and stir until dissolved. The sugar and coffee cool down the water drastically, so you don’t have to worry about chilling it before moving on to the next step.

Put the coffee syrup into a blender, and add about 8 ice cubes. Blend it until all ice cubes have been broken up and it is a slushy appearance.

Add in the cream and blend again until desired consistence. You’re aiming for a frothy drink, but don’t blend it so long you lose all of the ice crystals.

[ETA: Lately, I've been adding 1Tbsp of Hot Chocolate mix to the syrup or adding the equivalent chocolate milk syrup to the blender. Yum!]

Pour into your favourite tall glass and enjoy with a straw!

Oh thank you for posting this! TRuly, this seems so incredibly tasty. I've been avoiding coffee like the plague - though sometimes I want it just to help me get through the day! Haven't ventured into decaf or even instant - so next shopping trip I want to get some. This drink will hopefully carry me through the summer!

I make something similar...instead of half and half I use Unsweetened Vanilla Almond Breeze Almond milk...so good and it has like 40 calories for 8 oz :)
